We were commissioned to convert a former estate agent’s office into a new nutrition bar in the heart of Formby. The brief was to create a bright, welcoming space that reflected Poke’s focus on healthy, superfood-based meals, while making efficient use of a compact high-street unit.

Our role covered the full architectural package, from initial feasibility and space planning through to technical design and coordination with Building Control. The existing cellular layout was stripped back to the shell, allowing us to reconfigure the plan and introduce a clear customer journey from entrance, through ordering, to seating and collection.

The new layout maximises frontage and visibility to the street, with the servery and preparation area carefully positioned to showcase the freshly prepared food. Services, storage and staff areas are rationalised to the rear, ensuring the operational side of the business functions efficiently behind the scenes.

Material choices and detailing were developed to support Poke’s brand identity: clean lines, warm textures and a fresh, contemporary palette help to reinforce the offer of healthy, fast casual dining. Lighting design and glazing were considered to create an inviting atmosphere throughout the day, encouraging both quick stop-offs and longer stays.
